From our careful preparation of pork meat, produced by the
Consorzio Produzione Carni di Qualità (Quality Meat Production
Consortium) and from the passion of our expert hands, our
cured meats are born, unique in quality and taste. The Consorzio
operates in the Eugubino-Gualdese territory. Producers who
adhere to the Consorzio follow production regulations, under
the control of the ASL (Health Authority), throughout the
production process, from rearing to butchering. We do not
employ anti-oxidant meat treatment nor do our products have
preservatives added.

Salame
of pure pork
Obtained
from the preparation of lean pork meat, finely minced, with
small pieces of lard added and cured with iodine salt, pepper,
wine and garlic. The paste is stuffed into pork's intestine
and left to season in a grotto for six months approx..

Mixed
pork and boar salame.
Made
with lean pork and boar meat, softened with pork lard, without
sinews, worked by knife point according to ancient tradition
and seasoned with iodine salt, pepper, wine and garlic. Stuffed
in natural intestine and tied by hands. Seasoned in a grotto
for 5 months approx..

Loin
of pure pork
Obtained
from the preparation of boned pork loin, seasoned with iodine
salt, pepper, wine and garlic. Seasoned in a dry place for.
30 days approx, then washed and wrapped in paper and left
to season for a further 2 months.

Collared pork
Obtained from the preparation of boned pork neck,
it is left to seson for 35 days approx. then washed and wrapped
in paper and left to season for a further 2 months in a natural
enviroment where thanks to a particular microclimate which
combines temperature, humidity and air currents, it matures
slowly, finally reaching its typical smell and decisive taste.
Contents: weigh can vary from 1 to 1.5 Kilos approx.
Ingredients: pork, pork lard, iodine salt, pepper,
wine, garlic. Preservation: keep in a cool place, away
from the light or in the fridge, wrapped in a teatowel.

of bacon
Obtained from the preparation of pork's shoulder, cured with
iodine salt, pepper, wine and garlic. It is seasoned in a
dry place for two months, smoked with aromatic wood, then
washed and left to season for a further 4 months.

Ham
of boned pork
It is obtained from the preparation of pork's leg,
boned, seasoned with iodine salt, pepper, wine and garlic.
Left to season in a dry place for 2 months, it's then washed,
dried and left to season for another further 10 months.

Extra
virgin olive oil
Obtained from the working of organically cultivated olives.
Olives are hand-picked off the trees and pressed in the cold-press
method. Thanks to this methods of production, this oil can
keep all its organoleptic traits. It is both used raw, on
toasted bread or for dressing salads and first courses, and
also cooked in mediterranean cooking. It is appreciated for
its appetizing quality not less than for its high digestibility
and richness in vitamins. Stored in steel containers in a
dry, cool and dark place, it keeps its qualities for a long
time.
